Will the Ams play the same layout (holes/hole changes) as the Open division a week later?

Only TS knows that. I am going to guess it will be similar, but not exactly, as Tom will probably not want to give away the course layout in advance for the Open, but I could be wrong. I'm just guessing. I would imagine that the course, at least some of the time will be long for the Ams, like it is now, but the Pros may see new pin positions that have never been played on some holes. Again this is pure speculation, I have no real idea, and I will be away at the motherload when the Ams are playing, so I'll be wondering the same thing that week.
